Ingredient Snapshot: RC Find Foods has introduced Umami Sensations to the foodservice industry. The line comprises 10 different Umami powders that can be used in desserts, sauces, dressings and more to enhance flavor without adding salt, sugar or other ingredients: Fish Sauce Powder, Oyster Extract Powder, Kombu (Seaweed) Powder, Champignon Mushroom Extract Powder, Shitake Mushroom Extract Powder, Roasted Chinese Cabbage Powder, Mirepoix Powder, Soy Sauce (wheat-free) Powder, Red Miso Powder and Kokumi Powder. The company’s executive chef, Anthony Todaro, says he has used Red Miso Powder and Mirepoix Powder in apple and sweet potato pies, respectively, and Kokumi Powder in dairy products, such as whipped creams and butter cream frosting. All items are available in 4-ounce jars and 2-ounce shakers. Nine of the powders are non-GMO and marketed as clean label.
