Tortilla makers look at tara and locust bean gums

Tara gum and locust bean gum could be viable substitutes for guar gum as its prices stay high, says Dennis Seisun, who will speak at the upcoming TIA Tech Seminar sponsored by the Tortilla Industry Association.
