Joshua Zars is the North American sales and industry leader of food enzymes at DuPont Health & Biosciences. He has more than a decade of experience in the food enzyme industry, where part of his role at DuPont is determining new applications for enzymes in bakery, brewing, distilling, beverage and protein hydrolysis applications.
