Ensuring crisp, flaky croissants with a honeycomb texture and rich, authentic buttery flavor, these Laminated Butter Sheets are made using cream from grass-fed pasture-raised New Zealand cows. With a generous 83 percent milkfat composition and beautiful golden color, this product is made without the use of chemical processing or additives.
Anchor's new Laminated Butter Sheets have several performance advantages when used as an ingredient in baking and will save all food professionals an estimated 12-14 minutes per batch. The butter sheets are sold in quantities of 20 sheets, and each sheet is 2.2 pounds. Commercial pastry chefs can use butter sheets to save time and money, because these sheets are the ideal format for pastries, therefore less time is spent preparing butter and can speed up production while making large batches of pastry. Butter sheets have perfect texture for crisp and flaky croissants, they are highly flexible and allow for easy rolling, fast tempering, and excellent workability. They also have a higher melting point than other fats, so they won't soften too fast, or oil out at higher temperatures, which allows for greater productivity within commercial kitchens.
Known for their excellent plasticity, flexibility and workability, these pre-laminated butter sheets are designed to speed up production by eliminating the time spent on hand-prepping butter for pastries, enabling a higher lift and volume.
